I believe it is never too early for a healthy salad, especially if you are trying to reset your system after a day of overindulging! I didn’t eat so great yesterday, and my body was craving more raw veggies. I really needed to start my day off on the right foot, and what better way then to have a big salad with raw ingredients!
This salad is prefect for a fresh morning start. You can add some protein to your salad if you want, too! I enjoyed my salad just like this and had a brown rice protein shake. Yummy!
Strawberry Breakfast Salad with Creamy Strawberry Dressing

Ingredients
- 2 cups leafy greens
- ½ cup chopped fresh strawberries
- 2 Tablespoons raw almonds, chopped, slivered, or coarsely ground
- 1 Teaspoon chia seeds
- Dressing:
- ¼ avocado
- ¼ cup chopped strawberries
- 1 teaspoon fresh lime juice
- Water
Instructions
- In a bowl, combine the greens, strawberries, almonds, and chia seeds.
- In a small blender or food processor, puree the avocado, strawberries, and lime juice until smooth. Add water as necessary to make the dressing your desired thickness.
- Drizzle the dressing over your salad and enjoy!
- P.S. You can drink the remaining dressing – it’s a smoothie too! You will want to use it immediately – the avocado will not store well.
